Last Tuesday we had these tacos for dinner.
I found the recipe* via Pinterest on this blog howsweeteats.com under "Easy Weeknight Chicken Tacos" Easy my ass. Says who? Not me. Maybe this lady has time on her hands to spend in the kitchen but I do not. I have a general rule that if the prep time takes longer than the amount of time it takes the family to eat then it's not worth making. But, if I had all the time in the world or some of the ingredients already prepped I would totally make these again since 3 out of 4 kids ate it. And 3 out of 4 ain't bad around here.
Here are a couple of new things I learned from this dish. First, I discovered adobo sauce (from a can of chipotles). It's in the Mexican section at the store if you are looking for it, which I did not know until I Googled it, in the store while I was there. The adobo sauce has a unique flavor that I was totally loving, the kids not so much. I'd say it's more of a grown up taste.
The second good thing that came from this recipe is that I cooked chicken thighs in the crockpot, which I'd never done before. As luck would have it chicken thighs were on sale that week. Thighs and spices in a crockpot turned out so delicious the kids couldn't keep their hands off of it. I managed to save some of it for quesadillas later in the week. Will definitely be doing crockpot thighs again.
All in all I'd recommend trying this recipe. But really it's just easier to do plain old regular tacos.
*We did not use fancy cheese the recipe called for, we used regular shredded Mexican cheese which I knew the kids would like better. I'm sure it would have been good with fancy cheese but I'd be the only one eating it and I can't justify the cost or the added inches to my ass.
